At Dalka’s Craft BBQ, every plate tells a story — one that begins far from Texas, in the small town of Demotte, Indiana, where Chef and Pitmaster Kyle Dalka first fell in love with feeding people. In that tight-knit community, food wasn’t just something served — it was how family showed love and connection. That spirit still fuels everything we do today.
Kyle’s passion eventually led him south to Texas, where he graduated from Le Cordon Bleu in Austin, sharpening both his classical culinary foundation and his drive to create unforgettable food. But it was the slow craft of barbecue — the patience, the smoke, the fire — that captured him for good.
Before opening Dalka’s Craft BBQ, Kyle made his mark on the Wichita Falls food scene as the owner and creator of two popular local restaurant brands: Progress & Provisions and Progress Pizza. Those concepts allowed him to hone his creativity, leadership, and commitment to quality — and they laid the groundwork for the next chapter.
